Creating a meal with a store bought rotisserie chicken, or adding it to another dish, is a easy & inexpensive way to eat healthy on a budget.
Before you make anything with the chicken I highly recommend shedding it. This can be done by first removing all the meat from the skin and bones, then shredding it using two forks (like pulled pork) or finely cutting it with a knife.
I highly recommend shredding the whole chicken at once, as you can easily store it and you won't have to "get your hands dirty" when you want to use the leftovers. I typically get 3-4 meals out of one chicken.
Chicken is a great low fat source of protein and protein is great for you.
